Tofu is an incredibly versatile food that you can do just about anything with - and, it is an excellent source of protein!

Tofu, also called ‘bean curd’, is a white food made by coagulating soy milk, and then pressing the resulting curds into blocks. It is of Chinese origin, and part of East Asian and Southeast Asian culture. There are many different varieties of tofu, including fresh tofu and tofu that has been processed in some way. Tofu has very little flavor or smell on its own, so it can be used in savory or sweet dishes, and is often seasoned or marinated to suit the dish.

Tofu is low in calories, contains a relatively large amount of iron and contains little fat. Depending on the coagulant used in manufacturing, the tofu may also be high in calcium and/or magnesium. Fresh tofu can be divided into three main categories: soft/silken, medium or firm, and extra firm. I use soft/silken tofu in my Tofu Frozen Yoghurt, Medium or Firm (by Wildwood) daily, and Extra Firm in my Ratatouille.

Lunch: Blueberries, Spinach salad with shredded carrots, radishes, bell peppers, Stir fry rice with tofu

Dinner: Pear, Black eyed peas, yams and kale stew over rice; Tofu Frozen Yoghurt

Remember 3-4-4: Fruit, Orange Vegetable, Green Vegetable and Protein/Starch
 

Tofu Frozen Yoghurt

Tofu, or bean curd, is low in calories, contains a relatively large amount of iron and contains little fat. Depending on the coagulant used in manufacturing, the tofu may also be high in calcium and/or magnesium.
1 12 ounce cake of tofu*
2 frozen bananas, sliced
1/2 cup of unfiltered apple juice
2 cups of fresh, frozen fruit (your choice)
1 teaspoon paprika
Blender

Combine the first three ingredients (tofu, bananas and apple juice) in the blender. Blend till creamy. Add the cups of fresh, frozen fruit of your choice into the creamy mixture and blend again.

Serves 6. Enjoy!

* For best results, I use the Silken Tofu (Soft) by Mori Nu. Net wt. 12 oz.
